Fermented Beet and Orange Sauerkraut Salad Recipe [Beat the Winter Blues]
When oranges are in season, this is my go-to salad. Keep a jar of Passion Pink Sauerkraut on hand to make this salad in the time it takes to peel an orange.

Ingredients
1/4
cup (50 grams)
Passion Pink Sauerkraut

orange
1
ounce (28 grams)
feta cheese
1
sprig
fresh mint
Instructions
Peel orange, cut into bite sized pieces and place on plate.
Crumble feta cheese over orange.
Grab a few forkfuls of
Passion Pink Sauerkraut
, letting brine drip back into jar. Sprinkle over feta cheese.
Top salad with 5-7 finely sliced mint leaves.
Sprinkle with a pinch of salt.
Feel free to drizzle with a bit of honey or maple syrup.
Enjoy this refreshing burst of sweetness.
